Widely distributed in the plant kingdom, quercetin is the most abundant of the flavonoid molecules. It is found in many often-consumed foods, including apples, onions, teas, berries, vegetables of the cabbage family, seeds, and nuts. Quercetin is thought to be an essential component of the activity of many plants.

All flavonoid molecules are similar in their chemical structure; however, small changes in these molecules dramatically change their solubility, activity, and affinity for certain tissues. It appears quercetin is poorly absorbed; however, slightly altering the molecule significantly increases the molecule's water solubility and absorption.
